Tasting Notes: Briskly dry with a thrilling crisp acidity and pure poised fruit; this is a beautifully made, fresh steely unoaked Chablis showing great typicity, steely acidity, plenty of fruit with that unmistakable note of flinty “terroir”.
The Chablis vines are exposed on slopes facing northwards planted on clay and chalk soil from the Kimmeridgian period.
The grapes are harvested then immediately pressed using a pneumatic pressing machine. Thereafter, gravity settlement takes place for 24 hours to clear the juice in stainless steel vats, before the clear juice is racked in readiness for alcoholic fermentation. This is carried out in stainless steel for 15 days at 21º C, followed by malolactic fermentation over 5 weeks at 20º C.

A family owned winery run by Bernard Michaut and his son Adrien. This winery has 60 hectares of vineyards, including Domaine de la Motte, planted around Beine and Chablis. The vineyard is one of the most important in the Chablis region and over the years, the land has been restructured with sprinkler systems to combat the spring frosts which can devastate the grapes in this cool region.
The geographical location is image perfect reflecting the vineyard and the twelfth century church with its slender spire overlooking the peaceful and tranquil French village.

Awards and special notes
The cool summer and significant rainfall in July had Michaut Freres harvesting early to counter the higher sugar levels. His skills, expertise and attention to detail have produced a fabulous example of traditional Chablis.
